Sibio’s Restaurant was established in 1974 by Albert and Bernadine Sibio. Albert, having started working in the restaurant business at the very early age of 15, had developed a real passion for the food service industry.
In his late teens, Albert met Bernadine while employed as a cook and Bernie as a waitress at the New Delaware Restaurant in Scranton. Two decades and four children later, Albert and Bernadine were ready to realize their dream to own their own restaurant. The current location at 1240 Quincy Ave in Dunmore was up for sale, and they purchased it in 1974.
Upon graduating high school, Albert Jr. decided he wanted to attend the Culinary Institute of America to gain formal training to assist in the running of the kitchen. Laureen, the second eldest of the four children, worked in the restaurant briefly, then ended up moving and raising her family in the Harrisburg area. David, the third eldest, trained to become the restaurant mixologist and restaurant manager. Robert, the youngest of the four, also attended the Culinary Institute of America, later attending the International Pastry Arts Center to develop skills in French pastry, restaurant desserts, and bread baking.
Albert Jr., David, and Robert would work side by side with their parents for 30+ years using their classical training from the CIA and their parents’ knowledge acquired from many years of working in various restaurants and clubs.
In 1977 at the age of 18, a young aspiring chef by the name of Mark Hrebin joined the kitchen staff, working alongside Albert Sibio Sr. and the Sibio family. His hard work and dedication has been instrumental in the success of the restaurant for the past 38 years.
The restaurant still operates on the same three principles that Albert and Bernadine instilled into their children: quality, consistency, and value. The Sibio family and staff strive to continue to deliver a quality product consistently, and to keep it reasonably priced to ensure a good value.
